A great side dish which can be made the day before.

 

  • 5 cups of good quality frozen green peas

  • 1 beef bouillon cube - crumbled

  • 1 package of Boursin cheese (herb or pepper)

 

Cook peas in boiling water until just done (don't overcook).
Rinse in ice cold water and drain until dry.

Put 1/2 of the ingredients into a food processor and
pulse until just a few small bits of peas remain.

Repeat with second half of ingredients. Mix both batches together.

Serve at room temperature or warm slightly.
